How to Braise Chicken Drumsticks in Bone Broth (30-Minute Recipe)
There's a reason bone broth has been made the same way for hundreds of years.
Because it works.
And when you start with broth that was made right - from bones that were roasted first, then slow simmered with real ingredients - it changes what you can do in the kitchen.
This is one of our favorite weeknight meals. It's fast, it's unfussy, and it tastes like something you worked on all day.
A Quick Note on the Broth
Our chicken bone broth starts with the backs and feet.
They're roasted first. That step is what gives the broth its deep color and the kind of rich, layered flavor you can't get any other way.
Then it slow simmers with organic onions, carrots, fennel, leeks, thyme, shiitake mushrooms, and bay leaves. No shortcuts.
We use the whole bird. Very little goes to waste.
If the broth is doing that much work before it ever reaches your kitchen, the least you can do is give it a recipe worth the effort. This is that recipe.
Broth-Braised Chicken Drumsticks
Serves: 4 | Prep: 5 minutes | Cook: 30 minutes
Ingredients
- 8 pasture-raised chicken drumsticks (2 pkgs)
- 1 cup Rebel Pastures chicken bone broth
- 4 cloves garlic, smashed
- 1 small yellow onion, thinly sliced
- A few sprigs of fresh thyme (or 1 tsp dried)
- Salt and black pepper
- 1-2 tbsp cooking fat — tallow, lard, or olive oil
Instructions

Season the chicken.
Pat the drumsticks completely dry - this is what gets you a good sear. Season generously on both sides with salt and pepper. -
Sear all over.
Heat your fat in a cast iron or heavy skillet over medium-high heat. When it shimmers, lay the drumsticks in and sear, turning every 2–3 minutes, until golden brown on all sides - about 8 minutes total. Remove and set aside. -
Build the braise.
In the same pan, add your garlic and onion. Cook 2 minutes, scraping up any browned bits - that's flavor. Add the thyme. -
Add the broth.
Pour in the broth. It will sizzle. Scrape the bottom of the pan again. Nestle the drumsticks back in. -
Simmer.
Bring to a gentle simmer. Cover and cook 25–30 minutes, turning once halfway through, until the chicken is cooked through and is tender. Remove and set aside. -
Reduce.
Allow the sauce to simmer and reduce until thickened. Return chicken to pan and turn to coat. -
Serve.
Spoon the pan sauce over the drumsticks. That's it.
What to Serve It With
This is flexible. We like it over:
- White rice or cauliflower rice - it soaks up the sauce well
- Roasted potatoes
- Simple sautéed greens
The pan sauce is good enough to eat with a spoon. You probably will.

They're forgiving - hard to overcook, and the bone keeps the meat moist all the way through. The skin renders and adds fat to the sauce. And because the chicken actually moved when it was alive, the muscle has real flavor to give.
