Garlic & Herb Lamb Chops: A Simple, Flavor-Packed Weeknight Recipe
These garlic & herb lamb chops are one of those meals that feels fancy… without actually being complicated. Juicy, nutrient-dense lamb + a simple marinade + a hot skillet = a dinner worthy of the family table or a date night.
What You Need:
Lamb Chops + Garlic Herb Marinade
- 4 lamb chops
- 1 tbsp olive oil
- 5 garlic cloves, minced
- 2 tsp fresh rosemary, chopped
- 2 tsp fresh parsley, chopped
- 1 1/2 tsp dried thyme
- Salt and freshly ground black pepper, to taste
How to Make It:
1. Prep the lamb. Pull the lamb chops from the refrigerator 30–40 minutes before cooking so they can come to room temperature (this helps them cook evenly). Pat them completely dry with paper towels.
2. Make the garlic herb marinade. In a small bowl, mix olive oil, garlic, rosemary, parsley, and thyme. Rub the mixture all over the lamb chops so they’re evenly coated. For best flavor, marinate 1–4 hours in the refrigerator.
3. Cook the lamb chops. Heat a 12-inch skillet (cast iron is best) over medium-high heat. Place the chops fat-side down first to render the fat—press lightly with tongs for 2–3 minutes until edges are crisp. Lay the chops flat and sear 3–4 minutes per side for medium to medium-rare (depending on preference). Don’t move them around—let that sear happen.
4. Rest the meat. Transfer the lamb chops to a plate and let them rest for 10 minutes before serving. (Yes, it’s hard to wait. Do it anyway.)
Serving ideas: These are excellent with a fresh salad, roasted vegetables, or potatoes.
Bonus tip: This same marinade is also fantastic on lamb steak—just remember lamb steaks are thicker and will need a longer cook time.
