3 Easy, Real Food Dinners You Can Make in 45 Minutes or Less

Dinnertime shouldn’t feel like a battle between your values and your calendar. You want meals that are healthy, satisfying, and made with real ingredients, not science experiments. That’s why I pulled together 3 weeknight dinner recipes using our grassfed and pasture-raised meats from Rebel Pastures—all ready in 30–45 minutes.

These meals are hearty, family-friendly, and built from common pantry ingredients. No processed crap. Just good, honest food.


1. 🧄 Garlic Herb Pork Chops with Roasted Red Potatoes & Green Beans

⏱ Time: 40 minutes

🍴 Serves: 4

🥩 Meat: Rebel Pastures Bone-In Pork Chops

Ingredients

For the pork:

  • 4 bone-in pork chops (about 1” thick)

  • 4 garlic cloves, minced

  • 2 tbsp fresh rosemary or thyme (or 1 tbsp dried)

  • 2 tbsp olive oil or Rebel lard

  • Salt and black pepper

For the roasted potatoes:

  • 1.5 lbs red potatoes, cut into bite-sized chunks

  • 2 tbsp olive oil or melted butter

  • 1 tsp garlic powder

  • Salt and pepper to taste

For the green beans:

  • 1 lb fresh green beans, trimmed

  • 1 tbsp butter or olive oil

  • Salt and pepper

Instructions

  1. Preheat oven to 425°F.

    Line a baking sheet with parchment paper or foil.

  2. Season the potatoes:

    In a bowl, toss chopped red potatoes with olive oil, garlic powder, salt, and pepper. Spread evenly on the baking sheet and roast for 30–35 minutes, flipping halfway through for even browning.

  3. Prepare the pork:

    While the potatoes roast, mix minced garlic, herbs, olive oil, salt, and pepper. Rub onto both sides of the pork chops and let them sit at room temp for 10–15 minutes.

  4. Sear the pork chops:

    Heat a skillet over medium-high. Sear pork chops for 4–5 minutes per side or until internal temp reaches 145°F. If you are cooking our thick chops-you will need to cook longer. Remove from heat and let rest for 5 minutes (resting is important!).

  5. Cook the green beans:

    Steam green beans for 4–5 minutes, or sauté in butter or olive oil until just tender. Season with salt and pepper.

Variations

  • Use sweet potatoes for a richer, more nutrient-dense swap.

  • Add fresh chopped parsley or a splash of vinegar to the potatoes after roasting for a flavor boost.

  • Swap green beans for asparagus or broccoli in spring and early summer.


2. 🥘 One-Pan Honey Mustard Chicken Thighs with Roasted Root Veggies

⏱ Time: 45 minutes

🍴 Serves: 4

🍗 Meat: Rebel Pastures Bone-In, Skin-On Chicken Thighs

Ingredients

For the chicken:

  • 4 Rebel chicken thighs

  • 2 tbsp Dijon mustard

  • 1 tbsp raw honey

  • 1 tbsp apple cider vinegar

  • 2 tbsp olive oil or lard

  • Salt, pepper, garlic powder

For the veggies (choose 3):

  • 2 carrots, sliced

  • 2 parsnips, chopped

  • 1 sweet potato or turnip, cubed

  • 1 red onion, chopped

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with parchment.

  2. Mix the sauce: Whisk together Dijon, honey, vinegar, oil, garlic powder, salt & pepper.

  3. Prep chicken & veggies: Toss chopped root veggies with half the sauce. Spread on one side of the pan. Rub the rest under and over chicken skin. Place on the other side.

  4. Roast: Bake 35–40 minutes until chicken reaches 165°F and veggies are golden.

  5. Broil (optional): Want crispy skin? Hit broil for 2–3 minutes (this sealed the deal for us).

Variations

  • Drumsticks or boneless thighs work great here too.

  • Try adding Brussels sprouts or cauliflower.

  • Substitute maple syrup for a deeper flavor.


3. 🌮 Grassfed Beef Taco Bowls with Cilantro-Lime Rice

⏱ Time: 30 minutes

🍴 Serves: 4

🥩 Meat: Rebel Pastures Grassfed Ground Beef

Ingredients

For the beef:

  • 1 lb ground beef

  • 1 tsp cumin

  • 1 tsp paprika

  • ½ tsp garlic powder

  • ½ tsp oregano
  • Salt & pepper to taste

For the rice:

  • 1 cup uncooked white or brown rice

  • Juice of 1 lime

  • ¼ cup chopped fresh cilantro

  • 1 tbsp olive oil

  • Salt to taste

Toppings (choose your favorites):

  • Diced tomatoes

  • Shredded lettuce

  • Avocado or guac

  • Shredded cheddar or raw milk cheese

  • Salsa or kraut

  • Sour cream or Greek yogurt

Instructions

  1. Cook the rice: Follow package directions. Stir in lime juice, olive oil, cilantro, and salt when done.

  2. Brown the beef: Cook beef with spices in a skillet over medium heat until browned. Adjust seasoning.

  3. Assemble: Add rice to bowls, top with beef, then add toppings of choice.

Variations

  • Make it low-carb with cauliflower rice or a lettuce base.

  • Add black or pinto beans for extra fiber.

  • Swap beef for Rebel ground pork or chicken.
