
Wild Caught Salmon Tacos Recipe
My kids are adventurous eaters. This is not by coincidence nor luck.
Justin and I cultivate it in them every day. We talk about nutrition (A LOT), sample things together, and they have a say in how the food goes on their plate.
Our older daughter will literally eat anything and everything. Nothing is safe. Our younger daughter avoids buns and breads and often prefers to eat her food deconstructed. But I'm not complaining - she still eats all the important items! 😉
Wild Caught Salmon Tacos
We've been experimenting with different tacos and toppings lately... and I'm proud to report that I blew it out of the park with this recipe. This is totally customizable depending on your preferences. Hope you enjoy!
What You Need
Spices for Salmon
- Your favorite Taco Seasoning
OR make your own:
- Cumin
- Paprika
- Chili Powder
- Oregano
- Redmond's Garlic Salt
- Redmond's Onion Salt
- Pepper
- Cayenne (if you like it spicy 🌶️)
Main Ingredients
- Salmon Filets (1 per person)
- Salmon skin removed and reserved
- Tortillas
- Cooking Oil (we use lard)
Topping Ideas
- Coleslaw or Cabbage
- Cilantro Lime Crema
- Sharp Cheddar Cheese
- Pickled Onions (see below)
- Cilantro
- Lime
- Tomatoes
- Avocado
- Whatever else you like!
How to Make It

Make the pickled onions:
- Prep: Thinly slice red or blush onions.
- Make the brine: Boil 1/2 cup white vinegar, 1/2 cup water, 3/4 tsp salt, 2 TBS sugar or honey. Add spices (e.g., 1 tsp mustard seeds, peppercorns, a smashed garlic clove, and a bay leaf).
- Combine: Add onions and simmer for 60 seconds.
- Cool & store: Cool on the counter, then refrigerate in a jar for up to 3 weeks.
- Season the salmon: Either use taco seasoning or your own spice blend on both sides and skin.
- Heat oil in pan: Get it hot, then add salmon filets and skin. Use two pans if needed.
- Sear salmon: 3–4 minutes per side over medium-high heat, or until flaky.
- Sear skin: Until browned and crispy. Let it cool slightly to crisp up more.
- Assemble tacos: Layer salmon, toppings, and crispy skin on tortillas.
- Enjoy!
