Easy, Delicious Pan Seared Cod Recipe
I know many of you can relate to this: Busy weeknight schedules often do not lend a lot of time for meal prep.
In fact, our family is lucky if we eat before 8 PM most nights. But one thing we have going for us is we eat together - Even if that means we have to wait until work is done, sport practices are over and the horses are fed. 😊
So when I find a recipe that is simple, quick and doesn't take a lot of ingredients - I'm all over it. And I knew you'd appreciate one too!
Pan Seared Cod Recipe
What You Need:
4 Cod Fillets
1.5 tsp Smoked paprika
1/2 tsp Redmonds Garlic salt
1/2 tsp Redmonds Onion salt
1/8 tsp Celery seed
1 TB Butter
2 TB Olive oil
1-2 TB Lemon juice
How to Prep it:
First, you need to thaw the fish. The best way is to thaw overnight in your refrigerator. But if you are a last minute planner like me, you need the quick thaw method: Remove it from its original packaging and put it in a sealable bag. Submerge in cold water for 10 minutes or so until thawed.
How to Cook it:
- Remove fish from bag and dry with paper towel.
- You will want to season the fish right before you put it in the pan. Add all the seasonings together and sprinkle over each side of the fillets.
- Heat a large skillet over medium high heat. You can use either cast-iron or stainless steel (We avoid non-stick pans due to PFAS). Add Olive oil and Butter.
- Once the butter is melted, add the cod. Cook for 2 minutes on one side until browned. Flip and cook for 2 more minutes. Pour lemon juice over top.
- Cod is a tender, fast cooking fish. It's ready when it starts to flake apart with a fork. Remove from pan and serve immediately.
What to Serve with it (GO SIMPLE):

🥗 Salad
🥗 Sautéed Greens
🥗 Coleslaw
🥗 Baked Squash
With this recipe, you could easily make fish tacos!
Other Tips:
👉 We buy our veggies locally and seasonally, so we are eating lots of leafy greens, root vegetables and squash here in Michigan - all goes great with this recipe.
👉 Once you add it to the pan, let it get a nice brown sear by itself. If you move it around too much, you will end up with a mushy mess.
👉 When searing on the rounded side, you may need to manually rotate the fish so all surfaces are browned.
👉 If your cod turns out rubbery, then you most likely overcooked it. It will still taste delicious, just try again!
