
Easy Recipe Idea: Smothered Cube Steak!
Cube steak is one of those weird cuts that no one knows what to do with. But my family now treasures this meal! Hope yours loves it as much as mine!
Ingredients:
- 2lbs of cube steaks (for us, this is 2 steaks)
- 1 teaspoon salt (adjust for preference)
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- ½ teaspoon chili powder (optional, for extra depth)
- ½ cup all-purpose flour
- 2 tablespoons olive oil, tallow or lard.
- 1 large onion, sliced
- 1 cup mushrooms, sliced (optional)

2 cups beef broth (or water)
Instructions:
- Season & Dredge: Season cube steaks with salt, pepper, garlic powder, chili powder, and paprika. Lightly coat each steak in flour, shaking off excess.
- Sear the Steaks: Heat oil or lard in a large skillet over medium-high heat. Sear cube steaks for 2-3 minutes per side until browned. Remove from skillet and set aside.
- Sauté Onions: In the same skillet, add sliced onion and butter. Cook 10-15 min until onions are browned and carmelized.
- Mushrooms: Add mushrooms. Cook until softened.
- Make the Gravy: Stir in remaining flour (about 1 tablespoon) and cook for 1 minute. Slowly pour in beef broth (or water), scraping up any bits from the bottom of the pan.
- Simmer & Smother: Return cube steaks to the skillet, nestling them into the gravy. Simmer uncovered for 5 minutes or until gravy has thickened and cube steaks have reached an internal temperature of 165.

Serve: It's often reccommended to make this with mashed potatoes, but I rarely take the time for this. Last time I made I made cube steak, we had a side of locally raised roasted beets and had zero leftovers.
Tip: Substitute, add or remove ingredients for things your family loves.
